Pie Party

We had a pie potluck at work today. It was in the spirit of Thanksgiving, so we had many festive homemade goodies:

Pumpkin Pie, Sweet Potato Pie, Apple Pie, Peach Pie, Cherry Pie, Banana Cream Pie, Pumpkin Cheesecake, and a light Fruity Jello Pie. It was a real pie fest! One of our students even made homemade mini cinnamon buns with peanut butter frosting.

It was also a meal of firsts for me. I had homemade apple, pumpkin, and sweet potato pie for the first time ever! It was quite the experience. Nothing compares to homemade. I know what I’m baking next year! Store bought pie will never taste the same……..

I also discovered a new favorite pie: Sweet Potato :-D I had never had it before, and it is now one of my favorites! Super Yum!

It was a good day with good company. I really do love the holidays :-)

And as for my diet……this week I’m easing up on it a bit and just enjoying the festivities and fun. I will continue to stick to my portion control, and I’ll definitely stop eating when I get full because I have developed a new way of eating, and I’m happy with it. It’s a way of life I plan on sticking to for the long haul, regardless of the meal, occasion, or time of year. I am taking no vacations from my health goals and positive lifestyle.

Also, before today, I have only allowed myself dessert 2 times in the passed 2.5 months, so I plan on treating myself a bit this weekend. I’ve been working out really hard for the passed 3 months, and I’ve been in the gym 6 days a week the past 2 weeks prepping for this weekend (haha), so……..

I’m at a point in my weight loss journey where I could enjoy dessert once in a while without it affecting my progress too much, so I plan on having dessert all weekend, and I’m going to enjoy every bite! I’m not going to over do it, but I am going to do it :-P

Apple Nachos | Manifestvegan 

  • 3 crispy and slightly tart apples
  • 1 tsp lemon juice
  • 3 tbsp creamy natural peanut butter
  • 1/4 cup sliced almonds
  • 1/4 cup pecans
  • 1/4 cup flaked unsweetened coconut
  • 1/4 cup vegan chocolate chips

    “ For these, I sliced up some apples thin enough so it would be easy to eat the slice in one or two bites. I also lightly spritzed the apples with lemon juice to keep them from browning too fast.

    Then I melted some peanut butter–until it was super runny–and drizzled it all over the apples. Next, I topped the apples and peanut butter with unsweetened flaked coconut, sliced almonds, a few pecans and, of course, chocolate chips. And finally, I drizzled a little more peanut butter onto the plate. Ya know, for good measure.”
